Asiago old cheese conforms to the definition and standard of identity and is subject to the requirements for label statement of ingredients prescribed by Sec. 133.102 for asiago fresh cheese, except that it contains not more than 32 percent moisture, its solids contain not less than 42 percent of milk fat, and it is cured for not less than 1 year.
